The flavor enhancing properties of aspartame

Aspartame has a synergistic effect on certain food and beverage flavors, especially on acidic fruit flavors. Sensory evaluation suggests that it has a better synergistic effect on natural flavors than synthetic flavors. Applied to certain foods, this flavor enhancing property can reduce the use of aspartame and meet certain special needs of products such as chewing gum.
Chewing gum with aspartame has a sweetness duration that is four times longer than using sucrose. When mixed with some slightly less sweet sweeteners or salts, aspartame can easily alter its lingering sweetness and taste, which must be taken into account when preparing food.
