Under acidic conditions, neotame has roughly the same stability as aspartame. Under neutral pH range or instantaneous high temperature conditions, neotame is much more stable than aspartame, which greatly expands its application fields, such as in baked goods.
Under normal storage conditions, the dry powder of neotame has excellent stability, but its stability in aqueous solution is limited to some extent. Its stability is affected by factors such as temperature, acidity, and time, and the sweetness may decrease to a certain extent. The stability in aqueous solution at room temperature (25 ℃) is roughly: the half-life at pH 3.0 is 78 days; The half-life at pH 4.0 is 156 days; The half-life at pH 4.5 is 208 days; The half-life at pH 5.0 is 150 days; The half-life at pH 5.5 is 112 days. The optimal pH value is 4.5. In view of this, the use of neotame in combination with sucrose or other sweeteners can improve its stability.
